Holiday Dessert - Old Fashioned Fruit Cake

Fruitcake has become somewhat of a holiday joke to many people. Yet how many have actually tried a piece of truly delicious, moist fruitcake? Instead of passing a fruitcake on to someone else or saving it as an annual joke, why not make some yourself and help dispel the old myth?

The traditional fruitcake can trace its history back to the English plum cake, which came from plum pudding. These puddings were allowed to ripen in the cupboard for months, becoming hard and dry. Before being eaten, they were steamed to add moisture. After awhile, cooks found that if they saturated the cake in liquor, the cake would be preserved and it would keep it moist.

Dessert

An old holiday tradition was baking small trinkets into the fruitcake. A coin indicated wealth, a thimble thrift and a ship meant travel.

Recipe for Old Fashioned Fruitcake

Enjoy this rich cake full of tradition.

What You Need

  • 3 cups dried figs, chopped
  • 2 cups pitted dates, chopped
  • 2 cups golden raisins
  • 2 cups dark seedless raisins
  • 2 cups dried currants
  • 1-1/2 cups candied citron, diced
  • 1 cup candied pineapple, diced
  • 1 cup candied cherries, chopped
  • 1 cup candied orange peel, diced
  • 1 cup brandy
  • 3 cups all purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon baking soda
  • 2 cups butter, softened
  • 1 pound dark brown sugar
  • 6 large eggs
  • 1/3 cup dark molasses
  • 2/3 cup milk
  • 5 cups pecans
How to Make It

In a large mixing bowl, combine dates, figs, raisins, currants, pineapple, citron, cherries, orange peel, and brandy. Cover the bowl and let it sit overnight, stirring several times while soaking.

Preheat your oven to 275 degrees Fahrenheit. Grease a dozen mini loaf pans. Line the bottom of each tin with waxed paper and grease the paper.

In a medium sized bowl, mix the flour, cinnamon, allspice, baking soda, and cloves.

In a large bowl, use your mixer to beat the butter and brown sugar until well blended. Increase the speed to medium high and continue mixing until the batter is fluffy and light. This should take about 5 minutes. Scrape the sides frequently. Reduce the mixer speed to medium. Add eggs one at a time, mixing them into the batter completely. Add molasses and mix. Reduce speed to low. Add flour mixture a bit at a time, alternating with the milk. You should start and end with the flour mixture. Blend well.

Pour batter into larger bowl and add fruit mixture, any brandy that was not absorbed by the fruit and the pecans. Mix.

Spoon batter into the mini loaf pans, spreading evenly. Bake in the oven until a toothpick stuck in the center comes out clean. This takes about 1 hour 30 minutes. Let the fruitcakes cool in the pans on wire racks for 15 minutes. Run a thin knife around the edge of each cake and invert onto wire racks. Turn cakes upright and let them cool completely. Remove the waxed paper. Wrap cooled cakes in plastic wrap and then in a layer of foil. Keep in a cool place. They can keep in the refrigerator for up to a month before serving. Recipe makes 12 mini cakes.

Eight Ideas for Holiday Candy Cane Decorations

When the candy canes come out, it's a sure sign that the holidays are near. Unlike nowadays, there used to be just one type of Christmas candy. These candies, colored red and white striped and peppermint flavored, are always a wonderful holiday treat.

More so than being delicious, candy canes were also hung on the Christmas tree and eaten when the job of opening presents was done. Now this Christmas treat has become decorations for many other places, and are much more than just tasty snacks. Listed below are eight of the best ways we have seen to decorate with candy canes.

Candy

1) Design a wreath made of candy. If you're looking for a change from the usual green boughs and red ribbons, make a peppermint candy wreath for your front door of your home or office. Small peppermint canes are the best choice for this as they can be bunched and hooked together to form a circle. Our favorite peppermint treats are always a nice addition to a traditional wreath made with almost any material.

2) Use them as a centerpiece! The vivid colors of candy canes make them fine decorations for any table or desk. A nice jar with a few treats sticking out would make a fine holiday centerpiece. You'll have a few disappear, so have some spares around.

3) Add decorations to the candy canes - they are the basis for many Christmas craft projects; turn them into reindeer with a pipe cleaner, some felt, some glue, and googly eyes and they'll fit in just about anywhere!

4) Create a holiday tree garland. Candy canes can go onto your tree in many ways, not just hanging from the branches. Several candy sticks and some ribbon will make a wonderful garland for your Christmas tree.

5) Candy canes are a great for "Santa's sleigh" made of gingerbread. They have the right shape to make great runners for St. Nick's sleigh

6) They can also make good aisle markers. Candy canes are available in different flavors and in various sizes. Purchase two in the largest size available, and they can become posts for an entranceway, a path, or a hallway.

7) Candy canes can be great parts of a gingerbread village. They have many uses when they are included in a gingerbread village. They are also ideal for making lamp posts, fences, trees, or even road borders.

8) Make a "Welcome Bowl". At the office, remember to have the welcoming bowl of small Christmas treats. Everyone loves the peppermint taste, and the sweets bowl helps remind people of the giving spirit of the season.

There are so many different ways to use candy canes throughout the season. This list barely covers the possibilities! Sweet delicacies like these are also a major part of any decorating plans for the holidays.

Vanilla and Rum Sauces Make Holiday Desserts Special

My mother's parents were English and many of the meals she fixed for us reflected this heritage. Christmas dinner was always roast beef and Yorkshire pudding. Dessert was always plum pudding with warm sauce. There are many recipes for plum pudding and all are labor intensive. Mom made plum pudding from scratch a few times, but it was so much work she finally bought Crosse and Blackwell pudding imported from England.

The plum pudding was served with warm vanilla or rum sauce. I did not like the rich pudding, so I only ate a spoonful. But I could have eaten an entire bowl of sauce. Mom also served apple pie with warm vanilla sauce. The combination of warm sauce and fresh pie from the oven was heavenly. With a couple of changes the vanilla sauce recipe becomes rum sauce or rum-raisin sauce.

Desserts

I have lightened the recipe by using Splenda Blend for Baking instead of sugar and elminating the half cup of butter in the original recipe. However, I have added a tablespoon of butter for flavor. Warm vanilla and rum sauce turn simple cakes -- vanilla, apple, and spice -- into special desserts. Top frozen waffles with vanilla ice cream and sauce and you have one of the best desserts on the planet. Garnish with a twist of orange peel and fresh mint to make your holiday desserts more festive.

WARM VANILLA SAUCE

INGREDIENTS

1/2 cup Splenda Blend for Baking

2 tablespoons cornstarch

1/2 teaspoon light salt

2 cups hot water

1 tablespoon butter (no substitutions)

2 teaspoons pure vanilla extract

dash of freshly grated nutmeg

METHOD

Combine the Splenda Blend for Baking, cornstarch, and salt in a small saucepan. Whisk in hot water. Cook over medium heat, stirring constantly, until sauce has thickened. Remove from heat. Add vanilla extract and nutmeg. Makes 8 servings.

WARM RUM SAUCE

Omit the vanilla and nutmeg. Make the sauce and remove from heat. Add 2 teaspoons of rum extract.

WARM RUM-RAISIN SAUCE

Omit the vanilla and nutmeg. Add 1/4 cup raisins to the sauce and cook until thickened. Remove from heat and add 2 teaspoons of rum extract.

To many times I have seen clients of mine and non-clients continually give up on their goals because they allowed themselves to give in to the sweet aroma of a succulent turkey, potato salad, macaroni and cheese, not to mention desserts like sweet potato pie, or peach cobbler and my particular favorite, oreo ice cream pie (I'm making you hungry, aren't I).

To be totally honest with you, fat loss is simple. However, we are constantly tempted by friends, co-workers, and even ourselves to give in to our wants and desires, even though we feel bad about in the end because we know that once we step on the scale we're going to be five pounds heavier. So how do you make fat loss simple? By adhering to my ten rules of success to lose 10 pounds of fat or more and in less time than you think. If you use the information daily and apply constantly, there is no reason why you shouldn't lose at least 10 pounds of unwanted fat and 1-2 dress sizes before New Year's Day.

So if you want don't want blow up like a hot air balloon this holiday season, apply these tips to shape a new, leaner, sexier you.

1. Don't eat so much- This tip should be very obvious, but still needs to be addressed. 69% of Americans or overweight or obese, and it's not because we all have mutated genes or because we all just have big bones or anything that people like to use to make up excuses about being overweight.

Take more time to plan what you're going to eat on Thanksgiving and Christmas day, or any day for that matter. Try not to cover every inch of your plate with all the food you have available to you. Choose either the ham or the turkey, but never both. Choose two of your most favorite sides and make one is a starch and the other a vegetable. For example, you could have 4oz piece of ham along with whole grain stuffing and green bean casserole each being a serving the size of your fist.

Follow up with just a small piece of dessert and DO NOT GO BACK FOR SECONDS!

2. Don't starve yourself all day, only to gorge later on- I see this all the time. People will kill themselves by not eating the entire day just so they can do exactly what I told not to do in step 1.
Any time you starve yourself your body goes into fat storage mode. This is bad because when this occurs your body is not only storing fat, it is also dumping lean muscle tissue; which sends your metabolism crashing down worse than jet whose engines has gone out. If you think this is fun doing this to yourself then by all means keep at it, but don't be frustrated when you step on scale later and have buy bigger jeans because of your inability to resist eating so much.

3. Follow a MRT (metabolic resistance training) program- If you're not doing any resistance training then you are really doing yourself a disservice. Those with the best bodies have gotten them from following a well balanced resistance training program. You will do even better by following a MRT program. These programs focus on boosting your metabolism, strength, and cardiovascular health all at once. As a fitness professional and expert on fat loss I have had great success with many of clients by following the same system as opposed to traditional fitness programs. Here is an example of a program I would use at home with no equipment:

Warmup-5-10min (30 seconds on all exercises)
Run in place
Drop Squats
Walk out pushups
Supine 90 degree hip Crossovers
Shoulder Scaption

Repeat warm-up one more time after resting 1 minute

Ab Superset- 5 minutes (Perform each exercise for 30 seconds)

Side Plank w/ knee lift
Cross body Mountain Climbers

Rest 1min before repeating one more time

Strength Circuit-10min (Perform each exercise for 50 seconds, 10 seconds of rest in between exercises)

Overhead Sumo Squats
Grasshopper Pushups
Step up to lift on sturdy table or step
Rows in pushup position
Cross Country Skiers

Rest 1min and repeat 1-2 more times

Cooldown- 5 minutes

Corrective Static Stretching, (Stretch only your tightest muscles for 30 seconds each)

Calves
Quadriceps
IT Bands
Low Back

This workout should take you no more than 30 minutes to complete, but it will send your metabolism through the roof for days! Science has proven the efficiency of MRT workouts time and time again. So I would suggest you following this program if fat loss is your goal.

These simple, yet effective steps will help you start the process of achieving the body you want. If you are committed to your health and ultimately yourself you'll do more to achieve yours of being leaner, more attractive, and more confident than ever before. On the flip side, you could be heavier, less attractive, and less confident. What's your choice?
