What You Need

  • 1-1/2 cups vanilla wafers, crushed (approximately 45 wafers)
  • 1/3 cup pecans, chopped
  • 6 Tablespoons butter, melted
  • 1/2 cup heavy whipping cream
  • 2 packages (3 ounces each) lemon Jello
  • 1-1/4 cups boiling water
  • 1 package (3.4 ounces) instant lemon pudding mix
  • 1 pint lemon sherbet, softened

How to Make It

Combine the pecans, wafer crumbs, and butter together in a small bowl and set aside a quarter of it for topping. Press the rest of the crumb mixture into an ungreased 11 x 7 inch dish. Cover the dish and let the crust chill in the refrigerator for half an hour.

In another small bowl, beat the whipping cream until stiff peaks form. Set it aside. In a large bowl, dissolve the Jello in boiling water. Add the pudding mix and beat on low for 2 minutes. Add the sherbet and beat on low for 1 minute or until it is soft set. Gently fold in the whipped cream.
