Suman Moron originated from Leyte, an island in the Visayas. It is a popular Filipino dessert served during fiestas and other special occasions. Luckily, I don't have to wait for any special celebrations to taste this delicacy because these are commonly sold outside the church during Sundays.

This recipe makes about 30 pieces of Suman Moron 4-inches long each.

Dessert

Ingredients:

  • 2 cups glutinous rice flour
  • 6 cups ordinary rice flour
  • 2 kilos grated coconut meat
  • 1 big can evaporated milk
  • ½ kilo white (refined) granulated sugar
  • 1 kilo muscovado sugar
  • 30 chocolate tableya, melted with 1/4 cup water
  • 1 bar cheddar cheese (julienned)
  • 1 cup chopped peanuts
  • 1 small bottle vanilla extract
  • 8 cups boiling water
  • about 30 pieces banana leaves, cut into rectangles (8″x10″)

Cooking Instructions:

  • In a basin, place the grated coconut meat and pour boiling water. Set aside. (Note: 8 cups of canned coconut milk can be used as alternative.)
  • Mix the 2 types of flour well until thoroughly incorporated. Divide the flour mixture equally into two parts.
  • Squeeze the grated meat when the coconut mixture is already cool enough to handle. Use a fine strainer to separate the coconut milk. Divide the coconut milk equally into two parts.
  • In a thick-bottomed pan, place ½ of the flour mixture and pour in one part coconut milk, muscovado sugar, melted chocolate, vanilla extract and peanuts. Mix well and place over medium heat. Keep on stirring while cooking the mixture. At first, uneven lumps will form. But as you keep stirring, the mixture will even out as it thickens. Turn off the heat when oil starts to come out. Set aside to cool.
  • To the second half of flour mixture, add the remaining coconut milk. Then pour about half of the white sugar and the evaporated milk. Mix thoroughly. Place in a separate pan and cook over medium heat while stirring continuously. Remove from the heat when the mixture is thickened. Set aside to cool.
  • Pass the banana leaves over the heat to make them supple. Then use the squeezed-dry coconut meat over the leaves.
  • Take a heaping tablespoonful of the first mixture (chocolate) and place on the banana leaf wrapper. Sprinkle a little cheese on it before rolling, with the banana leaf covering the mixture. Therefore, you hands won't be touching the mixture being rolled.
  • Take another heaping tablespoonful of the second mixture (milk) and do the same process.
  • Place the two cylinders (milk and chocolate) and roll to form a thicker cylinder with the two colors fused together.
  • Roll the banana leaf to wrap tightly and tie a string at both ends to secure.
  • Repeat the process until all of the two mixtures have been wrapped.
  • Steam for about 45 minutes to 1 hour.
  • Let cool before serving.

Fondant Fancies were originally produced in the UK by the beloved Mr Kipling. They are incredibly sweet, consisting of a single cube of sponge cake, topped with butter cream, and coated in fondant icing, with chocolate or another colour of icing drizzled on top.

Can I make one now?

Sure, the process is quite long but the results are absolutely worth it. Gather together the following ingredients:

For the cakes:

- 175g unsalted butter

- 150g plain caster sugar

- 3 eggs

- 175g plain flour

- 1 teaspoon baking powder

For the fondant icing:

- 25g unsalted butter

- 100g dark chocolate

- 90g icing sugar

- 100ml boiling water

- 75g mascarpone cheese

- 75g melted white chocolate to decorate the fancies

Preparation:

Preheat the oven to 140C or gas mark 1. Grease up a 9 inch square cake tin.

Using an electric whisk, mix together the butter and sugar in a large bowl until light and fluffy. Gradually add the eggs, whisking continuously, and only add each one as soon as the last one has been fully mixed in. Fold in the flour and baking powder lastly.

Throw the mixture into the baking tin and bake in the preheated oven for 25-30 minutes. When done, set aside to cool and cut into 1 inch cubes.

Whiel you're waiting for that, boil a pan half full of water and leave to simmer. Suspend a heatproof mixing bowl on the pan (not allowing the base to touch the water), and add the dark chocolate, butter and icing sugar. Stir until nicely smooth. Gradually add the boiling water (you may not need the whole 100ml) until the mixture is runny enough to fall down the sides of the cakes.

Back to the inch square cakes, begin by placing a small lump of mascarpone on the top. Spoon over the icing and set aside for at least 30 minutes to allow the icing to cool and harden.

Finally, drizzle the melted white chocolate on top for effect and allow to cool again.

Unlike many delicate cakes and desserts of European origin, the British tend to enjoy their desserts (or "afters") as sickly sweet and of real substance! Here are two recipes for some classic British dishes - Spotted Dick and Sticky Toffee Pudding!

Spotted Dick

I have no idea why it's called this, but spotted dick remains a favourite in British families, and consist of a simple currant sponge cake soaked in Custard. Read on, and you will need:

- 50g butter

- 350g plain flour

- 3 teaspoons baking powder

- 140g suet (that's animal fat, by the way)

- 90g sugar

- 120g currants

- Zest and juice of two lemons

- 75ml milk

- 75ml cream, whipped

- Custard to serve (store bought is fine)

Preparation:

Use your fingers to grease up a pudding bowl (about 1.4 litre). Mix well the flour, suet, baking powder, sugar and currants. Melt the leftover butter and stir into the mix along with the lemon zest and juice. the zest should be fine. Mix the milk and cream separately then slowly stir it in.

Pour the whole mix into the pudding basin and cover with a double layer of greaseproof paper (tracing paper?). Tie around the edge with a piece of string.

The pudding should be boiled, not baked. If your microwave can't steam-bake, then make sure you have a pan big enough to hold a little boiling water and the pudding bowl. Cook for about an hour and half, making sure to check that the water hasn't boiled away (this is very important).

Serve with regular custard for a nice sloppy traditional spotted dick pudding!

Sticky Toffee Pudding:

For adult and children alike, sticky toffee pudding a family treat, but don't overdo it. You will need:

- 200g dried dates

- 250ml black tea

- 1/2 teaspoon bicarbonate of soda

- 85g unsalted butter

- 175g self-raising flour

- 1 teaspoon mixed spice

- 175g brown caster sugar

- 2 beaten eggs

For the sauce:

- 100g muscovado sugar

- 100g unsalted butter

- 150ml carton of double cream

Preparation:

Preheat the oven to mark 4, then boil the black tea with the dates. Keep boiling for about 4 minutes to soften them and stir in the bicarbonate of soda.

Cream the sugar and butter together then beat in the egg, flour and mixed spices. Fold in the dates and pour into an ovenproof dish. Throw into the oven and bake for a good 35 minutes until firm to the touch.

To make the sauce, cook the butter, sugar, and cream over a low heat until the sugar has dissolved. After a while, it should turn a nice toffee colour.

Cut the pudding into squares and top with hot sauce and a good scoop of ice cream.

Italian Dessert Cannoli Recipe

Cannolis are a great Italian dessert and they were said to have been developed by Sicilians in Palermo, Italy. These fried wafers are filled with a mixture of ricotta, candied fruit, chocolate, and other ingredients, and they are very, very tasty! Sicilians are supposed to have created this great dessert recipe, and I think that they are just delicious. I hope that this recipe is fairly easy to follow. You will need some type of dowel or metal tube that you will use to form out your cannoli shells. If you have a 3 ½ inch in diameter ring or even a 3 inch ring, you will need this to form the shape of your shells, also. You will also need a deep fryer, or a pan that is deep enough for these shells to float in oil.

Ingredients for Cannoli Shells:

3 Cups of unsifted flour

Italian Dessert Cannoli Recipe

1/4 Teaspoon of cinnamon

1/2 Teaspoon of salt

3 Tablespoon of granulated sugar

2 eggs

2 Tablespoon of firm butter cut into small cubes

1/4 Cup of a good Marsala wine

1-2 egg whites, whisked slightly

First thing is to sift the flour with salt, cinnamon, and granulated sugar. You will make a well in the center of your sifted flour mixture. In the middle of the well you have made you will add the egg and butter and start mixing with a fork. You will work the egg mixture with the fork from the center out, to incorporate the moist egg with the flour mixture. You will then add your Marsala wine slowly until dough begins to come together like a playdough mixture. You will then start working the dough with your hands to form the dough into a dough ball. You will then cover and let the dough rise for about 10-15 minutes.

If you have a stainless area to work on great, if not you will need a wooden cutting board. You will need to slightly dust the area you plan to work on with a small amount of flour. You will then roll out the dough into 1/4 inch thickness. You will then use your 3 ½ rings and cut the cannoli shell circles. You will then use a rolling pin to roll the circles into oblongs or ovals. You will then take your dowels or tubes and wrap the dough around cannoli forms. You will then whisk your egg white, and seal your dough edges by using a brush or very clean hands if you have no brush. You will then roll up ever so slightly the ends so they will have a very faint lip or ring on the edge of the cooked product.

At some point when you are ready to get your shells into the oil to start cooking them you will heat your oil to around 350 degrees. Once it is at the proper temperature you will begin to fry two, or three at a time in deep hot fat for about 1 minute, or until lightly golden. Remove with tongs to paper towels to drain, you will then let cool for about 30 seconds to one minute and then slip out cannoli form, holding shell carefully so you will not break it. Cool shells before filling. Let them hang out while you will start to make your filling.

Ingredients for the Cannoli filling:

3 lb. ricotta cheese, that has had moisture removed

2 1/2 Cup of confectioners' sugar

1/4 Cup of semi-sweet chocolate pieces or grated sweet chocolate

1/4 Cup candied cherries, finely chopped

1/2 Teaspoon of cinnamon

1/2 Cup of chopped pistachio nuts

Confectioners' sugar to dust each of the finished Cannoli's maybe about 1/2 Cup

First thing you will want to do is take your ricotta and place into cheesecloth and wrap it into a ball and then you will tie a knot in the top part of the ball you have made. You will want to hold over night if possible to drain the water from the ricotta. If you have some way to hang the cheese ball in your refrigerator that would be best. You will need to have a bowl under the cheese to catch all of the moisture that will drain off of the ricotta. The shells that you have made will hole for a couple of days if you want to make these in stages. They are worth the wait, and the time taken to make these little delicacies.

First you will take the drained ricotta and get it into the bowl and work it for a minute or two to get it more pliable. You will gently start to combine the cheese, and the sugar into a mixing bowl, and fold in with a spatula until you obtain a light, airy blend of ingredients. You will start to fold in the minced candied fruit and the chocolate very gently. You will then start to spoon the cheese filling into a pastry bag, or a large Ziploc if you do not have a pastry bag. You will then twist the top into a knot to keep the filling from emerging, and fill each of the Cannoli shells, squirting the filling in from either end.

Once you have all of the shells filled you will dip the ends of the cannoli in the pistachios. You will then arrange all of the Cannolis on a platter, and sprinkle with a little powdered sugar, and they're ready. If you would like to garnish you can save some of the candied cherries and place them on the center of each Cannoli after the powdered sugar has been applied. Then serve, and enjoy.

  1. Into a medium bowl, sift the sugar and cocoa.
  2. Melt butter in small pan.

  5. Place bowl on top of water, stir until chocolate is smooth and glossy.

  7. Turn oven down to 250 degrees F (130 C) and bake without disturbing for 1 1/2 hours.
  8. Slice fruit and sprinkle with lemon juice to prevent browning.
  9. Whip cream gently until soft peaks form.
  10. Turn oven off and crack door, leave Pavlova in until cool.
  11. Remove from oven and gently transfer Pavlova to serving plate. Fill hollow centre with fruit and top with whipped cream.

1 1/2 cups Dessicated Coconut

1 1/2 cups Dates; coarsely chopped

300 g Candied Cherries; red and green; chopped

2 tbsp Icing Sugar; for decoration

Method:

Mix chopped pecans, apricots bits, dates and cherries together. Drizzle condensed milk over fruit mixture and keep stirring. Add in vanilla essence. Now add in dessicated coconut. Fold in sifted flour until no more flour lumps.

Spoon cake mixture into greased tube pan. Bake in preheated oven at 150°C for 20 minutes before upping heat to 170°C and bake for another 30 minutes.

Allow cake to cool a little before removing from pan. Dust cake lightly with icing sugar. Keep cake in air-tight container.

In a medium-sized bowl, combine the 1/2 stick of melted margarine and graham cracker crumbs. Spread mixture evenly into the bottom of a 9 x 13" baking pan and place in the freezer for 15 minutes. In a large bowl, combine the eggs, 2 cups of melted margarine and confectioners sugar. Mix those 3 ingredients together using a mixer for 10-15 minutes. Remove baking pan from freezer and spread this mixture over top of the graham cracker crumbs. Slice bananas on top and then add the drained crushed pineapple. Cover pineapple with Cool Whip and sprinkle chopped nuts and cherries on top. Cover pie and refrigerate for 6 hours before serving. If desired, you can serve chocolate sauce over top of the pie but don't add it until 15 minutes before serving the pie to your guests.

No-Bake Banana Pudding Dessert

1 (12 ounce) box vanilla wafers

4-5 bananas

2 (4-ounce) boxes vanilla or banana cream instant pudding mix

3 cups of cold milk

1 (14-ounce) can sweetened condensed milk

1 (14-ounce) tub Cool Whip, thawed

Line a 13 x 9" baking dish with a single or double layer of vanilla wafers, then add banana slices. In a large bowl, prepare instant pudding mixes according to box directions and using the 3 cups of cold milk; mix in the sweetened condensed milk and then fold in the thawed Cool Whip. Pour this mixture immediately over the sliced bananas and vanilla wafers. Refrigerate dessert for 4-6 hours before serving.

How to make it:

Wash, peel, core and roughly chop the quince and put the pieces in a big pot. Cover the quince with water, and then add the lemon peel. Split the vanilla pod and add it to the pot. Bring the mixture to a boil, and then reduce it to a simmer.

Cover the pot and cook the mixture for about half an hour or until the quince is tender. Strain the water. Discard the vanilla. Puree the quince in a blender or food processor.

Measure out the quince puree. You will need the same amount of white sugar. It will be about four cups. Put the quince puree back into the pot and add the sugar. Cook over a low to moderate heat, stirring until the sugar dissolves. Add the lemon juice and simmer for about an hour and a half or until the quince paste is deep orange and thick.

Preheat the oven to 125 degrees F. Line an eight by eight inch baking pan with parchment paper, then grease it with melted butter. Pour the quince paste into the prepared pan, and then smooth the top to make it even. Bake for an hour to dry it, and then let it cool. Cut the membrillo into squares and serve it with manchego cheese and bread. Store uneaten membrillo in the refrigerator.

Recipe for Jello Pumpkin Pudding Dessert

What You Need

  • ½ cup butter or margarine
  • 1 cup flour
  • ½ to ¾ cup milled or chopped pecans or walnuts
  • 1 cup powdered sugar
  • 1 package cream cheese 8 ounce
  • 1 cup whipped topping
  • 2 ½ cups milk
  • 2 packages Jello vanilla instant pudding
  • 2 cups cooked or canned pumpkin
  • 2 teaspoons pumpkin pie spice
  • 2 cups whipped topping

How to Make It

Preheat oven to 350 degrees Fahrenheit.

Prepare a 9 x 13 baking pan with cooking spray to prevent sticking and then set aside until needed.

Using a medium size mixing bowl you will mix the butter, flour and nuts together. After mixing thoroughly press this mixture into the bottom of the prepared baking pan. Place in preheated oven and bake for about 15 minutes. Remove from heat and allow this to cool to the touch.

Using a small to medium size mixing bowl, you will blend the sugar and cream cheese together, and then fold in 1 cup of whipped topping. Spread this mixture over the cooled crust and set aside until needed.

At a low speed, add the milk, pudding, pumpkin, pumpkin pie spice and the remaining whipped topping and beat until smooth and creamy.

Spoon this mixture over the cream cheese filling. Spread evenly and then top this layer with the remaining whipped topping. Sprinkle with nuts and then set in the refrigerator to chill for at least 3 hours or even overnight until set before serving.
