Filipino Recipes - Suman Moron (Dessert) Recipe - Pinoy Food

Suman Moron originated from Leyte, an island in the Visayas. It is a popular Filipino dessert served during fiestas and other special occasions. Luckily, I don't have to wait for any special celebrations to taste this delicacy because these are commonly sold outside the church during Sundays.

This recipe makes about 30 pieces of Suman Moron 4-inches long each.

  • 2 cups glutinous rice flour
  • 6 cups ordinary rice flour
  • 2 kilos grated coconut meat
  • 1 big can evaporated milk
  • ½ kilo white (refined) granulated sugar
  • 1 kilo muscovado sugar
  • 30 chocolate tableya, melted with 1/4 cup water
  • 1 bar cheddar cheese (julienned)
  • 1 cup chopped peanuts
  • 1 small bottle vanilla extract
  • 8 cups boiling water
  • about 30 pieces banana leaves, cut into rectangles (8″x10″)

Filipino Recipes - Suman Moron (Dessert) Recipe - Pinoy Food

Cooking Instructions:

  • In a basin, place the grated coconut meat and pour boiling water. Set aside. (Note: 8 cups of canned coconut milk can be used as alternative.)
  • Mix the 2 types of flour well until thoroughly incorporated. Divide the flour mixture equally into two parts.
  • Squeeze the grated meat when the coconut mixture is already cool enough to handle. Use a fine strainer to separate the coconut milk. Divide the coconut milk equally into two parts.
  • In a thick-bottomed pan, place ½ of the flour mixture and pour in one part coconut milk, muscovado sugar, melted chocolate, vanilla extract and peanuts. Mix well and place over medium heat. Keep on stirring while cooking the mixture. At first, uneven lumps will form. But as you keep stirring, the mixture will even out as it thickens. Turn off the heat when oil starts to come out. Set aside to cool.
  • To the second half of flour mixture, add the remaining coconut milk. Then pour about half of the white sugar and the evaporated milk. Mix thoroughly. Place in a separate pan and cook over medium heat while stirring continuously. Remove from the heat when the mixture is thickened. Set aside to cool.
  • Pass the banana leaves over the heat to make them supple. Then use the squeezed-dry coconut meat over the leaves.
  • Take a heaping tablespoonful of the first mixture (chocolate) and place on the banana leaf wrapper. Sprinkle a little cheese on it before rolling, with the banana leaf covering the mixture. Therefore, you hands won't be touching the mixture being rolled.
  • Take another heaping tablespoonful of the second mixture (milk) and do the same process.
  • Place the two cylinders (milk and chocolate) and roll to form a thicker cylinder with the two colors fused together.
  • Roll the banana leaf to wrap tightly and tie a string at both ends to secure.
  • Repeat the process until all of the two mixtures have been wrapped.
  • Steam for about 45 minutes to 1 hour.
  • Let cool before serving.

Divine Dessert Recipes: The Fondant Fancy

Known to some as a French Fancy, but to us British as Fondant Fancy, the iced sponge cake is a divine dessert that many of us have "fond" memories of. What are they, where do they come from, and can I make them at home - are perhaps the questions at the forefront of your mind right now?

What are they and where do they come from?

\"Dessert Recipes\"

Fondant Fancies were originally produced in the UK by the beloved Mr Kipling. They are incredibly sweet, consisting of a single cube of sponge cake, topped with butter cream, and coated in fondant icing, with chocolate or another colour of icing drizzled on top.

Divine Dessert Recipes: The Fondant Fancy

Can I make one now?

Sure, the process is quite long but the results are absolutely worth it. Gather together the following ingredients:

For the cakes:

- 175g unsalted butter

- 150g plain caster sugar

- 3 eggs

- 175g plain flour

- 1 teaspoon baking powder

For the fondant icing:

- 25g unsalted butter

- 100g dark chocolate

- 90g icing sugar

- 100ml boiling water

- 75g mascarpone cheese

- 75g melted white chocolate to decorate the fancies

Preheat the oven to 140C or gas mark 1. Grease up a 9 inch square cake tin.

Using an electric whisk, mix together the butter and sugar in a large bowl until light and fluffy. Gradually add the eggs, whisking continuously, and only add each one as soon as the last one has been fully mixed in. Fold in the flour and baking powder lastly.

Throw the mixture into the baking tin and bake in the preheated oven for 25-30 minutes. When done, set aside to cool and cut into 1 inch cubes.

Whiel you're waiting for that, boil a pan half full of water and leave to simmer. Suspend a heatproof mixing bowl on the pan (not allowing the base to touch the water), and add the dark chocolate, butter and icing sugar. Stir until nicely smooth. Gradually add the boiling water (you may not need the whole 100ml) until the mixture is runny enough to fall down the sides of the cakes.

Back to the inch square cakes, begin by placing a small lump of mascarpone on the top. Spoon over the icing and set aside for at least 30 minutes to allow the icing to cool and harden.

Finally, drizzle the melted white chocolate on top for effect and allow to cool again.

Two Classic British Dessert Recipes - Sticky Toffee Pudding and Spotted Dick

Unlike many delicate cakes and desserts of European origin, the British tend to enjoy their desserts (or "afters") as sickly sweet and of real substance! Here are two recipes for some classic British dishes - Spotted Dick and Sticky Toffee Pudding!

Spotted Dick

\"Dessert Recipes\"

I have no idea why it's called this, but spotted dick remains a favourite in British families, and consist of a simple currant sponge cake soaked in Custard. Read on, and you will need:

Two Classic British Dessert Recipes - Sticky Toffee Pudding and Spotted Dick

- 50g butter

- 350g plain flour

- 3 teaspoons baking powder

- 140g suet (that's animal fat, by the way)

- 90g sugar

- 120g currants

- Zest and juice of two lemons

- 75ml milk

- 75ml cream, whipped

- Custard to serve (store bought is fine)

Use your fingers to grease up a pudding bowl (about 1.4 litre). Mix well the flour, suet, baking powder, sugar and currants. Melt the leftover butter and stir into the mix along with the lemon zest and juice. the zest should be fine. Mix the milk and cream separately then slowly stir it in.

Pour the whole mix into the pudding basin and cover with a double layer of greaseproof paper (tracing paper?). Tie around the edge with a piece of string.

The pudding should be boiled, not baked. If your microwave can't steam-bake, then make sure you have a pan big enough to hold a little boiling water and the pudding bowl. Cook for about an hour and half, making sure to check that the water hasn't boiled away (this is very important).

Serve with regular custard for a nice sloppy traditional spotted dick pudding!

Sticky Toffee Pudding:

For adult and children alike, sticky toffee pudding a family treat, but don't overdo it. You will need:

- 200g dried dates

- 250ml black tea

- 1/2 teaspoon bicarbonate of soda

- 85g unsalted butter

- 175g self-raising flour

- 1 teaspoon mixed spice

- 175g brown caster sugar

- 2 beaten eggs

For the sauce:

- 100g muscovado sugar

- 100g unsalted butter

- 150ml carton of double cream

Preheat the oven to mark 4, then boil the black tea with the dates. Keep boiling for about 4 minutes to soften them and stir in the bicarbonate of soda.

Cream the sugar and butter together then beat in the egg, flour and mixed spices. Fold in the dates and pour into an ovenproof dish. Throw into the oven and bake for a good 35 minutes until firm to the touch.

To make the sauce, cook the butter, sugar, and cream over a low heat until the sugar has dissolved. After a while, it should turn a nice toffee colour.

Cut the pudding into squares and top with hot sauce and a good scoop of ice cream.

Italian Dessert Cannoli Recipe

Cannolis are a great Italian dessert and they were said to have been developed by Sicilians in Palermo, Italy. These fried wafers are filled with a mixture of ricotta, candied fruit, chocolate, and other ingredients, and they are very, very tasty! Sicilians are supposed to have created this great dessert recipe, and I think that they are just delicious. I hope that this recipe is fairly easy to follow. You will need some type of dowel or metal tube that you will use to form out your cannoli shells. If you have a 3 ½ inch in diameter ring or even a 3 inch ring, you will need this to form the shape of your shells, also. You will also need a deep fryer, or a pan that is deep enough for these shells to float in oil.

Ingredients for Cannoli Shells:

3 Cups of unsifted flour

Italian Dessert Cannoli Recipe

1/4 Teaspoon of cinnamon

1/2 Teaspoon of salt

3 Tablespoon of granulated sugar

2 eggs

2 Tablespoon of firm butter cut into small cubes

1/4 Cup of a good Marsala wine

1-2 egg whites, whisked slightly

First thing is to sift the flour with salt, cinnamon, and granulated sugar. You will make a well in the center of your sifted flour mixture. In the middle of the well you have made you will add the egg and butter and start mixing with a fork. You will work the egg mixture with the fork from the center out, to incorporate the moist egg with the flour mixture. You will then add your Marsala wine slowly until dough begins to come together like a playdough mixture. You will then start working the dough with your hands to form the dough into a dough ball. You will then cover and let the dough rise for about 10-15 minutes.

If you have a stainless area to work on great, if not you will need a wooden cutting board. You will need to slightly dust the area you plan to work on with a small amount of flour. You will then roll out the dough into 1/4 inch thickness. You will then use your 3 ½ rings and cut the cannoli shell circles. You will then use a rolling pin to roll the circles into oblongs or ovals. You will then take your dowels or tubes and wrap the dough around cannoli forms. You will then whisk your egg white, and seal your dough edges by using a brush or very clean hands if you have no brush. You will then roll up ever so slightly the ends so they will have a very faint lip or ring on the edge of the cooked product.

At some point when you are ready to get your shells into the oil to start cooking them you will heat your oil to around 350 degrees. Once it is at the proper temperature you will begin to fry two, or three at a time in deep hot fat for about 1 minute, or until lightly golden. Remove with tongs to paper towels to drain, you will then let cool for about 30 seconds to one minute and then slip out cannoli form, holding shell carefully so you will not break it. Cool shells before filling. Let them hang out while you will start to make your filling.

Ingredients for the Cannoli filling:

3 lb. ricotta cheese, that has had moisture removed

2 1/2 Cup of confectioners' sugar

1/4 Cup of semi-sweet chocolate pieces or grated sweet chocolate

1/4 Cup candied cherries, finely chopped

1/2 Teaspoon of cinnamon

1/2 Cup of chopped pistachio nuts

Confectioners' sugar to dust each of the finished Cannoli's maybe about 1/2 Cup

First thing you will want to do is take your ricotta and place into cheesecloth and wrap it into a ball and then you will tie a knot in the top part of the ball you have made. You will want to hold over night if possible to drain the water from the ricotta. If you have some way to hang the cheese ball in your refrigerator that would be best. You will need to have a bowl under the cheese to catch all of the moisture that will drain off of the ricotta. The shells that you have made will hole for a couple of days if you want to make these in stages. They are worth the wait, and the time taken to make these little delicacies.

First you will take the drained ricotta and get it into the bowl and work it for a minute or two to get it more pliable. You will gently start to combine the cheese, and the sugar into a mixing bowl, and fold in with a spatula until you obtain a light, airy blend of ingredients. You will start to fold in the minced candied fruit and the chocolate very gently. You will then start to spoon the cheese filling into a pastry bag, or a large Ziploc if you do not have a pastry bag. You will then twist the top into a knot to keep the filling from emerging, and fill each of the Cannoli shells, squirting the filling in from either end.

Once you have all of the shells filled you will dip the ends of the cannoli in the pistachios. You will then arrange all of the Cannolis on a platter, and sprinkle with a little powdered sugar, and they're ready. If you would like to garnish you can save some of the candied cherries and place them on the center of each Cannoli after the powdered sugar has been applied. Then serve, and enjoy.

Ginseng Side Effects

The use of herbs is a time-honored approach to strengthening the body and treating disease. However, herbs contain active substances that can trigger side effects and interact with other herbs, supplements or medications. For these reasons, herbs should be taken with care, under the supervision of a practitioner knowledgeable in the field of botanical medicine.

Possible side effects of Ginseng have a reasonably good safety record. The most common side effects are nervousness and excitability that usually decrease after the first few days. The ability to concentrate may be decreased, and blood sugar may decrease to abnormally low levels. Because ginseng has an estrogen-like effect, women who are pregnant or breastfeeding should not take it. Occasionally, there have been reports of more serious side effects, such as asthma attacks, increased blood pressure, palpitations, and, in postmenopausal women, uterine bleeding. To many people, ginseng tastes unpleasant.

\"Dessert Recipes\"

Both American and Asian ginsengs are stimulants and may cause nervousness or sleeplessness, particularly if taken at high doses. Other reported side effects include high blood pressure, insomnia, restlessness, anxiety, euphoria, diarrhea, vomiting, headache, nosebleed, breast pain and vaginal bleeding.

Ginseng Side Effects

Siberian ginseng may cause nervousness and restlessness in some individuals. In rare cases, Siberian ginseng may cause mild diarrhea. Siberian ginseng is not recommended for individuals with very high blood pressure. It may cause insomnia in some people if taken too close to bedtime. IF symptoms like breathing problems, tightness in the throat or chest, chest pain, skin hives, rash, or itchy or swollen skin develop, the use of taking Siberian ginseng may be stopped.

There have been reports that Asian ginseng may possibly decrease the effectiveness of the blood-thinning medication. Warfarin when taken with ginseng may inhibit platelet activity. Aspirin may not interact well either. Consult with your physician before taking any herbal supplement. The American Herbal Products Association (AHPA) has rated ginseng as a class 2d herb and specific restrictions apply.

  • 2 tablespoons sugar

If you like, you can make the filling a day ahead and keep it refrigerated. If you want to do that, let it reach room temperature again before continuing with the recipe.

Warm the tortillas in a heavy skillet or on a griddle, then divide the pear mixture between them. Fold the sides in and then roll them up, securing them with toothpicks. Easy Chocolate Dessert Recipe

Chocolate is one of the oldest processed foods enjoyed over the past millennium. It came from the tropical tree called cocoa. This tree is native to South America, Central America and Mexico. The seeds of the cocoa tree are dried and fermented and finally grounded and liquefied. As a result of these processes, pure unsweetened chocolate is formed.

There are different kinds of chocolate. Each is classified according to its composition and color. Milk chocolate is the combination of sugar, cocoa butter and milk. It is considered not a true chocolate because of the absence of cocoa solids formed from the processes involved in production of pure chocolate. White chocolate can be consumed by animals. The addition of sugar and fats makes up the third kind of chocolate. Dark chocolate has high cocoa content and is believed to have health benefits by reducing the occurrence of heart attack. One example of dark chocolate is semisweet chocolate which is used in cooking recipes. Sometimes vanilla is added for a more pleasing aroma.

Tips For Making Light Fluffy Cakes

Cakes are not the easiest thing in the world to cook but if you want to become proficient at making the best Mexican dessert recipes, learning how to make a fluffy sponge cake, which you can flavor with Mexican chocolate or top with homemade cajeta, is a good idea.

How to Cream Butter and Sugar

Tips For Making Light Fluffy Cakes

Many cake recipes will tell you to cream the butter and sugar, but what does this mean exactly? The best way to "cream" butter with sugar is to start off with softened butter. This means it needs to be at room temperature. Add the sugar and use an electric beater to mix it. The mixture is ready when it is smooth and pale.

Add the eggs gradually, so the batter does not curdle. One at a time is usually fine. Beat the eggs into the butter and sugar mixture until just combined. Never over-beat the mixture once you have added the eggs because this stops it from being light and fluffy. Next, add the flour. Use a spatula or wide metal spoon to fold it in.

How to Fold Flour

Folding means gently stirring rather than beating. You do not want to add too much air to the mixture, which is the reason for stirring gently with a wide, flat spoon. Folding in the flour usually takes place once the sugar, butter, eggs, and other ingredients have been well combined. The flour might be mixed with other powdered ingredients, like sugar, salt, or baking powder, before you add it.

Use a rubber spatula or metal spoon. Begin at the back of the mixing bowl, cut vertically through the mixture, across the bowl base, and back up the other side. Rotate the bowl a bit and fold again. This gentle movement combines the flour with the other ingredients. Repeat until the flour is well mixed in.

  • 1 tablespoon melted butter, for greasing
  • 2 teaspoons vanilla extract

Preheat the oven to 350 degrees F. Use the melted butter to grease a nine by nine inch cake pan, then sprinkle flour over it. Alternatively, line a muffin pan with paper liners. Cream the butter with the sugar, then gradually beat in the eggs and vanilla extract. Fold the flour and baking powder into the mixture. Stir in the milk until the batter is smooth, and then transfer it to the cake pan or muffin pan.

Bake the cake for half an hour or forty minutes if it is in a cake pan, or about twenty five minutes if you are using a muffin pan. When the cake is springy to the touch, it is ready. Cool on a wire rack and serve.

Using Quince to Make Delicious Desserts

Quince is a relative of pears and apples. The trees have grown around the Mediterranean and in Asia for more than four thousand years, making it one of the earliest known fruits. This fruit was discovered by the ancient Greek armies in Iran and Asia and brought to Greece. Today quinces are grown on the Greek island of Crete. Quince is also available today in the United States, the Middle East and in Latin America. Quinces in Western Asia are juicier and softer than those in the United States.

Quince varies in different regions and in cold climates, the fruit is rich gold in color, has a heady fragrance, and has a firm shape. The rind is rough and the flesh is hard. In a warmer climate, however the fruit can be eaten raw and the woolly rind is not there. Quince is often used to make jellies because of its tart and astringent flavor.

How to Choose and Store Quinces

Using Quince to Make Delicious Desserts

Firm, big, yellow quince without any green are the best ones. Handle them carefully because they can bruise. Wrap the fruit in plastic and keep them in the refrigerator for up to a couple of months. Quinces are available from September to January.

Quinces are great for baking, poaching, or stewing, to make dessert recipes. They can also be stewed with meat because the high amount of tannins found in quince helps to tenderize the meat.

Membrillo - A Mexican Specialty

Quince is known as membrillo in Spanish and it is cooked into a firm red paste called dulce de membrillo in Spain, Uruguay, Chile, Argentina, Venezuela, and Mexico. It is served with manchego cheese in sandwiches or on crackers. There is a similar dish in Hungary and also in Portugal.

Dulce de membrillo is especially popular in Mexico and if you enjoy making Mexican recipes, and especially Mexican dessert recipes, you might like to try making this delicacy yourself.

Recipe for Dulce de Membrillo

You will need:

  • 4 lbs quince
  • 1 vanilla pod
  • 3 tablespoons lemon juice
  • 4 cups white sugar
  • 1 tablespoon melted butter
  • 2 strips lemon peel, 2 inches by 1/2 inch

How to make it:

Wash, peel, core and roughly chop the quince and put the pieces in a big pot. Cover the quince with water, and then add the lemon peel. Split the vanilla pod and add it to the pot. Bring the mixture to a boil, and then reduce it to a simmer.

Cover the pot and cook the mixture for about half an hour or until the quince is tender. Strain the water. Discard the vanilla. Puree the quince in a blender or food processor.

Measure out the quince puree. You will need the same amount of white sugar. It will be about four cups. Put the quince puree back into the pot and add the sugar. Cook over a low to moderate heat, stirring until the sugar dissolves. Add the lemon juice and simmer for about an hour and a half or until the quince paste is deep orange and thick.

Preheat the oven to 125 degrees F. Line an eight by eight inch baking pan with parchment paper, then grease it with melted butter. Pour the quince paste into the prepared pan, and then smooth the top to make it even. Bake for an hour to dry it, and then let it cool. Cut the membrillo into squares and serve it with manchego cheese and bread. Store uneaten membrillo in the refrigerator.

The History of Cupcakes

While no one is quite certain where cupcakes came from, it is known that they made an appearance in the United States sometime in the 19th Century. Called Fairy Cakes in the United Kingdom, cupcakes revolutionized how cake was made and mothers across the land lauded the blessing.

Prior to the introduction of the cupcake to the kitchens of America, cakes were made by weighing the ingredients. Cupcakes were made by measuring the ingredients for the first time. It has been suggested that this is perhaps where the term "cup cake" originated, since everything was measured in cups. Other origins of the name have also been offered, such as the fact they are baked in a cup but at one time, cupcakes were also called "number cakes". This name originated from the recipe, whereby it required "...once cup butter, two cups sugar, three cups flour, four eggs..." At one time, recipes called for cupcakes to be "...baked into little tins."

\"Dessert Recipes\"

Until the turn of the 20th century, cupcake pans were virtually unheard of forcing bakers to use more formidable cups for baking, unless they wanted to bake their small cakes into loaf form. Using hearth ovens, which needed longer cooking times for larger cakes, caused bakers to seek other ways to bake their cake and still have time to eat it. With the advent of the cupcake, not only were bakers able to achieve shorter cooking times, they were also able to change the way they prepared them once the baking part was finished. No longer did bakers need to create larger, heavier cakes. With the production of the cupcake, people could slake their desire for something small and sweet.

The History of Cupcakes

Though cupcakes only recently developed an upsurge in popularity, causing a number of bakeries to specialize in just cupcakes, it was in 1919 when Hostess developed the precursor to the Hostess Chocolate Cupcake. The rich, creamy filling and chocolate icing was popular with consumers and a love affair was begun. Conveniently baked into a single serving, cupcakes provided a quick snack and permitted people to nibble on them whenever they wished. In addition, they were sinfully delicious to but their small size allowed them to feel good about not over eating.

Cupcakes are now common in grocery store, pre-made and pre-iced. The baking aisle is filled with a large variety of cupcake papers, beginning with paper thin and progressing to a firm, rounded edge made of cardboard. So popular is the cupcake small artisan bakeries, creating nothing but cupcakes, have begun to spring up across the country. Selling for an average of to a dozen, they are dear, but if you want cupcakes that are head-turning, sometimes paying someone to decorate them in a unique or unusual way is the best way to go. A more recent trend, gaining in popularity, is cupcake towers in lieu of a more traditional wedding cake.

Eating a cupcake can make you feel young again and with the variety of flavors and frostings that have progressed over the decades, there isn't an appetite or yen that can't be solved with a tasty cupcake.

Origin Of Cheesecake - It's Older Than You Think

Have you ever wondered about the origin of cheesecake? Well, I did and the information that I found was amazing.

If you thought that cheesecake was a recent creation, then you're wrong. The origin of the cake is believed to have originated in ancient Greece. History has the first recorded mention of cheesecake, as being served to the athletes during the first Olympic Games held in 776 BC. The recipe consisted of crushed cheese, wheat flour and one egg. It's not quite the recipe of modern cakes today, but a cheesecake none the less.

\"Dessert Recipes\"

Their first introduction into Western Europe and Great Britain was said to have come from the conquering Roman armies and by 1000 AD was said to be flourishing throughout all of Europe.

Origin Of Cheesecake - It's Older Than You Think

The origin of cheesecake in the Americas was brought over by the immigrants. However, their version relied on cottage cheese to make the cake.

As for the modern version, it's creation began in 1872 with American dairymen, who were said to be trying to recreate French Neufchatel cheese. Instead of recreating it, they happened upon a formula that was more richer and creamier. Their creation: cream cheese.

However, in 1912 James Kraft developed a his own method to pasteurize cheese, in which other dairy product manufacturers soon adopted and offered as cream cheese.

However, the origin of cheesecake being made with cream cheese has been credited to Arnold Reuben, owner of the legendary Turf Restaurant at 49th and Broadway in New York City.

Legend has it that he was served a cheese pie by a friend, which he immediately fell in love with. Not satisfied with his friend's recipe, he began to develop his own. Once perfected, he eventually began to serve it at his restaurant. The cheesecake was said to have become quickly popular with his patrons.

And the rest as they say is history.
