Old-Fashioned Pineapple Pound Cake Dessert

If you enjoy old-fashioned pineapple pound cake, I think you will appreciate this recipe from my grandmother. This is a really delicious dessert cake that I like to make and serve during the summer months.

If desired, you can make the recipe using the topping listed below, or you can completely omit it and leave the cake plain.



1/2 cup vegetable shortening

1/2 lb. butter, softened

2 3/4 cups granulated sugar

6 large eggs

3 cups all-purpose flour

1 teaspoon baking powder

1/4 cup milk

3/4 cup canned un-drained crushed pineapples with juice

1/4 cup butter, softened

1 1/2 cup confectioner's sugar

1 cup crushed pineapples, drained

Tip: Do not substitute margarine for the butter.

In a large mixing bowl, cream together the shortening, butter and granulated sugar. Slowly add in the eggs, one at a time, beating after each addition.

In a large mixing bowl, sift together the all-purpose flour with the baking powder and then add it to the creamed mixture, 1 large spoonful at a time, alternately with the milk. Stir in the vanilla extract and crushed pineapples with the juice, blend all ingredients well.

Lightly spray a 10" round tube pan with nonstick cooking spray. Pour the pound cake batter into the prepared baking pan and place in a cold oven. Turn the heat on to 325 degrees and bake for 1 hour and 15 minutes, or until the top springs back when lightly touched.

To make the pineapple topping: In a large bowl, combine the confectioner's sugar, 1/4 cup softened butter and the 1 cup of drained crushed pineapples. Pour this mixture over your hot cake and then let it cool.

Recipe for Malaysian Caramel Cake

What you will need:

  • 1 1/3 cups white sugar
  • 4 oz butter flavored Crisco
  • 6 eggs
  • 1 1/2 teaspoons baking soda
  • 1/2 cup condensed milk
  • 1/2 pint water
  • 2 cups all purpose flour

How to make it:

Grease a nine inch round cake pan and line the base and sides with greased paper, making the sides higher than the cake pan. Melt the sugar in a small pan over a moderately high heat and keep cooking it until it turns golden brown. Let the caramel cool for half a minute, then add a tablespoon of water at a time until the mixture stops spitting and sizzling and then pour in the remaining water.

Turn the heat back up and keep stirring the caramel, scraping down the sides of the pan. Take it off the heat and stir in the Crisco. Let the caramel cool. Beat half the caramel with the flour in a mixing bowl with an electric mixer, then add the rest of the caramel and keep beating until the mixture is bubbly.

Let it stand for about ten minutes. Whisk the condensed milk and eggs together until the mixture is bubbly, and then add this mixture to the flour mixture. Stir in the baking soda and pour the batter into the cake pan.

Let it stand in the oven for half an hour, then turn the oven on and heat it up to 300 degrees F. Bake the cake for about an hour. When the center is firm and a skewer inserted into the middle comes out clean, it is done.

4th of July Desserts Suitable For Diabetics

July 4 is not only the birthday of our great country, it is also a day synonymous with the 5Fs; family, friends, fun, fireworks and food. And we diabetics don't want to be cheated on the food part of the celebration! Following, I have pulled together some great recipes that are suitable for diabetics and I believe, excellent dessert ideas for your Fourth of July celebrations.



1/2 cup fresh blueberries

1 cup fresh strawberries

1 small package strawberry-flavored sugar-free gelatin

3/4 cup boiling water

1/2 cup cold water

ice cubes

3/4 cup frozen sugar-free whipped topping, thawed

Wash fruit and pat dry on a paper towel; set aside. Reserve 3 strawberries with leaves still attached. Reserve 6 blueberries and set aside with the 3 strawberries. Get six parfait glasses and divide the remaining fruit evenly between them. Set aside.

In a medium mixing bowl, stir boiling water into gelatin. Stir at least two minutes to dissolve gelatin completely. Put cold water in a two-cup measuring cup and add ice cubes to make 1 1/4 cups. Add to the gelatin and stir until slightly thickened. Remove any remaining bits of the ice cubes. Pour out 3/4 cup of the gelatin and set aside. Pour the remaining gelatin evenly over the fruit in the six parfait glasses. Refrigerate 1 hour or until set but not firm. Using a wire whisk, stir whipped topping into the remaining gelatin until smooth. Spoon over gelatin in parfait glasses. Refrigerate 1 hour or until firm. Before serving, top half the glasses with the reserved strawberries and half with the reserved blueberries.


2 small pkgs sugar-free instant vanilla pudding mix

3 cups low-fat milk

8-oz light cream cheese, softened

8-oz carton frozen sugar-free whipped topping, thawed

16 Oreo sugar-free cookies, broken into pieces

Mix together pudding mix and milk on low speed of electric mixer; add cream cheese and mix until well blended. Add whipped topping and mix well with a large spoon (do not use mixer). Add cookie pieces and mix in. Chill for several hours or overnight before serving.


3/4 cup boiling water

1 small pkg sugar-free orange gelatin

1/2 cup cold orange juice

1/2 cup cold water

1/2 cup fresh raspberries

1 small can mandarin oranges, rinsed and drained

Put dry gelatin into a medium mixing bowl. Stir in boiling water and still at least two minutes until gelatin is completely dissolved. Stir in juice and cold water. Refrigerate approximately 1 1/2 hours until thickened to the point that a spoon drawn through the mixture leaves a definite impression.

Take 3/4 cup of the thickened mixture out and set aside. Stir raspberries and orange segments into the remaining gelatin mixture. Pour into 6 serving dishes or into 1 larger bowl. Beat the reserved gelatin on high speed of electric mixer until fluffy and approximately doubled in volume. Spoon over gelatin. Refrigerate at least 3 hours until firm.

If you don't mind heating up the oven--I suggest doing this early in the day--try these apple dumplings. We all know Apple Pie is considered very American but why not show your family and friends how creative you are by changing things up a little and going with Apple Dumplings instead?


2 cups self-rising flour

1/2 cup shortening

3/4 cup low-fat milk

5 cups chopped apples

1 cup Equal Sugar-Lite

1 tsp cinnamon

Preheat oven to 375 degrees. Cut flour into shortening as if making a pie crust. Add milk. Make into a dough and roll out into a rectangle. Add Equal and cinnamon to apples and mix together. Spread apple mixture over dough. Roll up jelly-roll style and cut into slices. Place into a baking pan and pour sauce over all. Bake 1 hour.

To make sauce: Bring to boiling:

2/3 cup butter, 1/2 cup sugar, 1 cup Splenda and 1 1/2 cups boiling water

NOTE: The sauce in this recipe uses 1/2 cup sugar. You can substitute 1/2 cup unsweetened applesauce or go with the sugar if you don't like the applesauce results. But be aware of this when fitting this recipe into your diet!


1 sugar-free angel food cake

1 pkg (8 oz) light cream cheese, softened

1 small pkg sugar-free instant vanilla pudding mix

1 tsp vanilla extract

3 tbsp Splenda

1 can lite cherry pie filling or no-sugar-added cherry pie filling

1 small carton sugar-free frozen whipped topping, thawed

1/3 cup chopped pecans, if desired for garnish

Tear cake into bite size pieces and lay on bottom of a 9x13-inch pan. Mix pudding according to package directions and refrigerate until set. Mix cream cheese, vanilla and Splenda into the pudding. Pour mixture over top of cake pieces. Spread pie filling over pudding mixture. Top with whipped topping. Sprinkle chopped pecans over the top. Refrigerate 1 hour before cutting to serve.

Roasting With a Convection Oven

Convection oven roasting is different than doing the same job in a conventional oven, but it doesn't have to be hard. A convection oven, such as those produced by Anvil America, works by circulating the hot air through the oven. This allows faster, more effective cooking at lower temperatures, more even baking (with no hot or cool spots in the oven) and moist, delicious foods. Roasts get a dark, even crust that seals in juices and keeps them moist, and there's less need to baste or turn your meat. Let's take a look at convection oven roasting and how you can do it.

You'll want to choose your roast as usual, picking a good quality cut of meat. Even the best convection oven can't turn a lower grade into Prime, after all. Season your meat as you normally do, with a dry rub, some salt, pepper and olive oil, a marinade, or your favorite seasoning method. Then, place it on a baking sheet (with a drip plan situated below it) or in a broiler or roasting pan. If you usually cover the meat, omit this step. Roasting in a convection oven requires no covering of any kind.


Now, set the oven temperature to your usual temperature and allow it to preheat with only the lowest rack remaining in the oven. Once the oven has properly preheated, place your roast in the oven. Allow it to cook at the normal roasting temperature for fifteen minutes only. Then, reduce heat by twenty-five degrees for the rest of the cooking. Convection oven roasting is done at a lower temperature than ordinary roasting.

The roast should be cooked for about three quarters of the time that it would normally take in a conventional oven. This means that a roast which ordinarily cooks for two hours will cook only for an hour and a half using a convection oven. Begin checking the roast for doneness about fifteen minutes before you expect it to be finished, however. You don't want to accidentally over cook your meat!

Take your roast out of the oven and allow it to rest for twenty minutes to preserve the juices, then carve! That's all there is to this kind of oven roasting - a little less time and a little less heat for a perfect roast with next to no effort. It's amazing what a difference a convection oven can make in your cooking. Try it with other foods, too. Vegetables roast very well, for instance, and are done extremely quickly. Convection ovens are a great choice for any home!

Eleven Different Ways To Serve Dessert Mixes - Made With Cream Cheese And Cool Whip


Many chip dip mix companies also sell dessert mixes. These wonderful dessert mixes are usually made with cream cheese and a whipped topping similar to Cool Whip. Here are 11 different ways you can serve these delicious dessert mixes. Make sure you read the Toppings sections. You can use these toppings to create your own signature desserts that will be the envy of all who taste them.


FRUIT DIP OR CRACKER / COOKIE DIP   If you are making a dip, serve with animal crackers, ginger snaps, chocolate covered graham crackers, graham cracker dipping sticks or mini Vanilla Wafers. For a fruit dip, serve with apple slices, orange slices, pears, peaches, cantaloupe, strawberries or grapes. Try two or three different flavors with a variety of foods to dip into the dips. Also, try a variety of different toppings. Yummy!


Fill tart shells with dessert dips and then add some of the toppings listed below. The dips also act as a great filling for cannoli or cream puffs.


Another great idea for parties is Mini Cheesecakes. Buy some mini cupcake baking cups (liners) and put a full sized Vanilla Wafer in the bottom to act as a crust. Then fill the baking cups with the dip mixes topped off with one or more of the toppings listed below. Try two or more different flavors or toppings.

FULL SIZED CHEESECAKES   One of the prepared packages of dessert mix will fill a 9" graham cracker pie shell. It will be level at the top of the crust, but not mounded high. The toppings you use may add height and beauty to the cheesecake. Freeze and partially thaw before serving for best results. (See list of toppings below.) 


For a thicker consistency cheesecake, use 16 oz. of cream cheese and no Cool Whip. You may want to add some sugar or artificial sweetener to the mix to compensate for the sugar usually provided by the Cool Whip (actually any whipped topping may be used instead of Cool Whip).   

SPREADS   Spreads are made the same as cheesecakes, above - with or without Cool Whip, depending on how thick you want the spread to be. I suggest using the Cool Whip version. If you use all cream cheese, you may want to add some sugar or artificial sweetener to the product for added sweetness.  

These spreads are fantastic on bagels, waffles, nut breads, toast, muffins, cookies, graham crackers, and pancakes. Use them between cake layers and as icing for an unbelievable Boston Cream Pie!

CHEESE BALLS    For a cheese ball, you will want to use all cream cheese (16 oz)  - no Cool Whip. You may wish to add some sugar or artificial sweetener, if you feel you need it. Keep it in the refrigerator for four hours. Roll in a TOPPING listed below, or sprinkle a topping on top of the cheese ball. Great with fruit slices, butter cookies, chocolate covered graham cracker cookies or regular graham crackers.

CREAM PIES    Use both cream cheese and whipped topping for this recipe. You may also freeze the pie and serve it semi-thawed if you like it that way. I like my cream pies mounded high. One prepared package of mix will bring a 9" graham cracker (or chocolate cookie) pie shell to the top of the crust. If you wish to have a higher mounded pie, as I do, use another half batch of mix. (You can freeze the other half.) Another option for a higher mounded pie with our Banana Cream Pie dessert mix, is to add one to one and a half bananas - sliced, and put into you finished pie filling. Fold it in gently and it adds enough extra volume to fill the pie shell with a nice high mound. With our other dessert mix flavors, you can add many of the TOPPINGS listed below to create a higher pie or just because it adds another delicious flavor to your wonderful pie.

PARFAITS  -  What a dazzling display of color and flavor you can make with parfaits using the dessert mixes. Add two or more flavors of dessert dip, alternating between layers of whipped topping, fresh berries, chunks of pound cake, and whatever else your imagination dictates. Use some of the TOPPINGS listed below and you can't go wrong.

MOUSSE  -  The easiest way of all to serve our delicious dessert dips. Just mix them up with cream cheese and whipped topping and put them in serving dishes with a TOPPING listed below. Grab a spoon and get ready for the compliments.

CAKE FROSTING  -  I met a lady at a craft show that told me she uses the dessert mixes as a cake frosting. Use a little less cream cheese and a little more whipped topping to make it thinner to just the right consistency for frosting and easily spreadable. It adds a whole new dimension to your cakes. It's kind of like a Boston Cream Pie, but it's a cake. And remember, you can freeze them. What a great idea.

TOPPINGS -  Shredded coconut, heath bar pieces, reese's pieces, m&m's, crushed graham crackers, cool whip or similar topping, fresh fruit, candy sprinkles, crushed nuts, mini chocloate chips, crushed candy bars and more!


If you are making a dip, use animal crackers, graham crackers, chocolate covered graham cracker cookies or fresh fruit. There are also two other relatively new products on the market that are wonderful too. One of the most popular ways of serving your dip is with these bite sized, graham cracker "dipping sticks". They are made just for this purpose. Your dip will taste like a cheesecake with a graham cracker crust.

Another product available are mini, bite sized Vanilla Wafers. They are about the size of a dime and are wonderful. If you are having a party, I suggest at least two batches of dip. You can try two different flavors with two different serving ideas, such as one dip with dipping sticks and one with mini Vanilla Wafers.

LIGHT OR FAT FREE WHIPPED TOPPINGS    If you are using one of the recipes that call for whipped topping (Cool Whip, etc.), be aware that "light" or fat free whipped toppings produce a much thinner product than regular toppings. It tastes fine, it just isn't as thick or stiff, and won't stand up well on your plate when it's sliced. It will be more like pudding.

IF FAT CONTENT IS A FACTOR, there is a way around this problem. Make it with light or fat free topping and then freeze it. (Again, this product freezes beautifully.) Let it thaw about 15 - 20 minutes or until it is easy to slice, but still partially frozen. SERVE IMMEDIATELY. This semi-frozen state allows the slices to stand up on your plate. However, don't let it thaw completely or you've defeated the whole purpose of freezing it. Regular whipped topping always works best if fat content is not a factor, but either way is delicious.
