This sweet potato pudding is popular during the holidays in Cuba. Chill it for a couple of hours or serve it hot. It tastes great either way! This recipe makes enough to serve four people.

What you will need:

  • 2 cups brown sugar
  • 1 1/2 lbs sweet potato
  • 2 limes
  • 1 stick cinnamon
  • 1 cup heavy cream
  • 1 teaspoon salt
  • 3 egg yolks
  • 1 tablespoon butter
  • 1 tablespoon vanilla extract
  • 1/8 teaspoon ground cinnamon or grated cinnamon stick
  • Water, as needed
How to make it:

Peel and chop the sweet potato and cover it with water in a pan. Add a teaspoon of salt and boil it for twenty minutes or until tender. Drain the potato and mash it using a fork, blender, or food processor.

Peel the limes and save the fruit for another use. Put the peel in a big pan with the brown sugar, cinnamon stick, and two cups of water. Cook the mixture over a moderate heat until it reaches 250 degrees F, stirring it all the time. You will need a candy thermometer to gauge the temperature.

Take out the peel and cinnamon and turn the heat down to low. Add the mashed sweet potato and keep stirring the mixture until it is smooth. Take it off the heat. Beat the cream, butter, egg yolks, and a pinch of salt until smooth, and then add this to the sweet potato mixture.

Cook it over a low heat for a couple of minutes, then take the pan off the heat and stir in the vanilla. If the mixture is too runny, you can mix a quarter cup of cornstarch with a quarter cup of water and add this. Divide the sweet potato pudding between serving bowls and garnish each one with a little ground cinnamon.

Here are two lemon cake recipes she enjoyed making. Sadly, we lost her in April 2008, but these and other recipes bring us sweet memories of her joy in serving her family nutritious meals and delicious desserts. Lemon Meringue Cake
(makes 12-16 servings)

1 pkg. Duncan Hines Lemon Supreme Deluxe Cake Mix
1 regular-size package lemon pudding and pie filling
2 egg whites
1/4 cup sugar

Two Delicious Lemon Cake Desserts

Using 8 inch round cake pans, make and cool cake as directed on the label. Cook lemon pudding and pie filling as directed for pie filling. Cool 30 minutes according to the box instructions; stir several times. Beat egg whites until frothy; gradually add sugar; beat until stiff but not dry. Split each cake layer into 2 thin layers. Stack on cookie sheet or oven-proof plate, spread lemon pudding between layers and on top of cake. Spread meringue around sides of cake. Bake at 450 degrees F for about 5 minutes, until light brown. Cool to room temperature before serving. Store cake in the refrigerator.

Lemon Pound Cake

1 package Duncan Hines Lemon Supreme Deluxe Cake Mix
1 Package lemon instant pudding mix (4 serving)
1 tbsp. lemon juice
1/2 cup Crisco oil
1 cup water
4 eggs
10 lemon drop candies

Blend all ingredients in large bowl, then beat at medium speed for 2 minutes. Bake in a greased and floured 10-inch tube pan at 350 degrees F for about 45-55 minutes, until center springs back when touched lightly. Cool right side up for about 25 minutes, then remove from pan.

Glaze: Blend 1 cup confectioner's sugar with either 2 tbsp. lemon juice. Drizzle over cake. Press lemon drops into the glaze at equal distances.

LUSCIOUS LEMON POKE CAKE & FLUFFY LEMON PUDDING FROSTING

1 box of your favorite white cake mix, baked in 2 9-inch layers
2 cups boiling water
1 large pkg lemon flavored gelatin or 2 small pkgs

How to Make a Delicious Lemon Cake With Lemon Pudding Frosting

Allow cake layers to cool on wire racks. Wash pans and return cooled cakes to the clean pans. Pierce cake with a large 2-tine fork at about 1/2-inch intervals.

Stir the boiling water into the gelatin in a mixing bowl with a pour spout. Stir at least 2 minutes or until the gelatin is thoroughly dissolved. Carefully pour half the mixture over one cake layer. Pour remaining gelatin over the second cake layer. Refrigerate for 3 hours. Remove from refrigerator and dip one pan into warm water for about 10 seconds to loosen. Unmold onto the serving plate. Spread with about 1 cup of the frosting (recipe below). Unmold the second cake layer same way as the first and place atop the frosted layer. Frost the top and sides of the cake with the remaining frosting.

Refrigerate cake for at least an hour before serving. Store any leftover cake in the refrigerator.

FLUFFY LEMON PUDDING FROSTING:

1 cup cold milk
1 pkg (4-serving size) Lemon flavored instant pudding mix
1/4 cup powdered sugar
8-oz frozen whipped topping, thawed

Pour milk into a large bowl and add the pudding mix and powdered sugar. Beat with a wire whisk for 2 minutes. Fold in the whipped topping. Use as frosting for the above Lemon Poke Cake.

Not all blenders are capable of crushing ice so check the manufacturer's instructions if you are not sure or just use a rolling pin to crush the ice yourself.

You can vary the ingredients in this Mexican snow cones recipe if you like, swapping the strawberries for raspberries, the lemon juice for lime juice or using another type of fruit. You can also get readymade flavored syrups, which are handy for making snow cones.

What you will need:

  • 10 cups ice cubes
  • 4 cups hulled strawberries
  • 2 tablespoons lemon juice
  • 1/3 cup white sugar
  • Fresh mint, to garnish
How to make them:

Puree the strawberries in a food processor or blender, and then transfer the puree to a pan, adding the sugar. Stir it occasionally over a moderate heat until the mixture boils, then stir in the lemon juice and let it cool.

Cook on full power for about a minute. Whisk two or three eggs together and pour them over the fish cook on full power for a further two minutes. Take out of the microwave and leave to stand for two minutes. This makes a great filling and healthy meal for you to enjoy and will impress your friends.

4; Fridge omelette;

Take all those left over bits of veg,ham,bacon and any other left overs in your fridge. Put them in a microwave dish and add two or three eggs and cook on full power for one and a half minutes. This should use up your left overs ad give you a tasty fun snack.

5; Meringue with mars bar sauce.

Take two egg whites and add sugar or a sweetener, whisk the two together until the mixture turns into white peaks. Butter a microwave dish and spoon in three or four blobs of of the mixture. Microwave on full power until it puffs up. Take out of the microwave and leave to finish cooking through. Chop up a mars bar and put it in a microwave safe bowl. Cook on full power until it melts. Pour the sticky mess over the puffed up meringues and consume rapidly. Be careful as the melted mars will be very hot.

Foil cooking allows you to prepare delicous meals in the coals of your campfire and have nothing to wash when dinner is over! Below are 7 of my favorite foil wrap recipes. But first let's go over the basics of tin foil cooking:

  • Use heavy-duty foil so you don't burn the food and so the packet doesn't tear.
  • Use assembly-line technique, not one foil packet at a time. E
  • Put some butter in the packet so your food won't stick to the packet.
  • Sprinkle seasonings generously. It makes others think you are a pro at this.
  • Double-seal by folding twice to keep the moisture in.
  • When you fold leave air room for heat circulation inside.
  • Don't cook foil packets over roaring fire. A small fire or white hot coals is better.

Tip: For first night, prepare the foil packets at home. When you get to camp, just toss them on the coals.

Here are 7 foil packet recipes: Note: depending on how hot the coals are, it takes generally 20-30 minutes, less for fish or pre-cooked items. Turn every 5 minutes.

Recipe 1. Ham & Sweet Potato

- 1 slice of pre-cooked ham (this can be fresh or canned)

- 1 serving canned yams (about 3 pieces)

- 1 or 2 canned pineapple rings

- 1 to 2 tablespoons of brown sugar

- 1/2 tablespoon butter

Recipe 2. Chicken Potato Packets

- 4 boneless, skinless chicken breast halves

- 4 medium red potatoes, cut in 1/2-inch cubes

- 2 cups frozen green peas

- 1 jar (12 oz.) chicken gravy

- 1 teaspoon salt

- ½ teaspoon dried thyme

- 1/8 teaspoon pepper

Recipe 3. Baby back pork ribs

- 3 pounds baby back pork ribs

- 1 tablespoon packed brown sugar

- 1 tablespoon paprika

- 2 teaspoons garlic powder

- 1 ½ teaspoons pepper

- ½ cup water

- 1 ½ cups barbecue sauce

- 1 teaspoon lemon pepper

- 2 lemon slices

- 1 pound peeled and de-veined medium uncooked shrimp

- 4 cups cooked rice

- ½ pound smoked sausage, sliced

- 1 can (14 1/2 oz.) diced tomatoes with garlic and onions

- 1 medium green bell pepper, chopped

- 3 to 4 teaspoons dried Cajun seasoning

- 1 teaspoon hot sauce

- 4 boneless pork chops, about 1/2-inch thick

- 1 teaspoon chili powder

- 1 cup medium chunky salsa

- 1 can (15 1/4 oz.) whole kernel corn, drained OR 1 package (10 oz.) frozen whole kernel corn

- ½ cup chopped green bell pepper

- 4 medium sweet potatoes, peeled and cut into 1/4-inch slices

Calling all apple lovers. Here are a couple of old-fashion apple dessert recipes from my vintage recipe collection. Mom's Apple Dumplings are a delicious after dinner dessert or they are great for visiting with friends or co-workers over a cup of coffee. The Apple-Cheddar Cheese Dessert is so easy even a beginner can make it in no time. Both are also perfect for taking to "pitch-ins".

MOM'S APPLE DUMPLINGS

\"Dessert Recipes\"

DOUGH:
2 cups self-rising flour
1/2 cup shortening
3/4 cup milk
FILLING:
5 cups chopped apples
1 cup sugar
1 tsp cinnamon
SYRUP:
2/3 cup butter
1 1/2 cup sugar
1 1/2 cup boiling water

Make dough by cutting shortening into the flour until crumbly. Add milk and blend to make a dough. Roll out dough on a lightly floured surface with a lightly floured rolling pin. Roll into a rectangle.

To make filling, In a mixing bowl, put apple, sugar, and cinnamon. Stir to mix well. Spread dough down the center of the dough. Roll up sides to make a roll. Cut into medium thick slices and place in a lightly greased baking pan.

To make syrup, bring water to a boil in saucepan. Add butter and sugar and return to a boil. Pour syrup over dumplings. Bake approximately 1 hour at 375 degrees.

APPLE-CHEDDAR CHEESE DESSERT

6 pared, sliced apples
1 tbsp lemon juice
1 cup sugar, divided
1/2 cup flour
dash salt
1/2 tsp cinnamon
1/4 cup margarine
2/3 cup shredded Cheddar cheese

Place apples in greased baking dish; sprinkle with lemon juice and 1/2 cup of the sugar. Combine flour, salt, cinnamon and remaining sugar. Add margarine and mix until crumbly. Stir in cheese and spread over apples. Bake approximately 45 minutes at 350 degrees until lightly brown on top.

The history of the fig dates back to around 9000 BC, when remnants were found in Neolithic villages. The Fig is widely grown for its edible fruit throughout Iran and also in the rest of the Mediterranean region and other areas of the world.

Figs have become an important staple in many consumers diet due to the health benefits. Figs are a prime source of fiber, calcium, copper, manganese, magnesium, potassium, and Vitamin K. Additionally; they are high in antioxidants and maintain healthy digestion.

Typically, when making a fig preserve recipe it is quite imperative to use the figs you purchased immediately. The shelf life is quite short so when planning to prepare a recipe, make sure you have an ample amount of time set aside to complete the entire process.

Although there are hundreds of recipes for preserves and jams, here is a basic preserve recipe to get you started:

INGREDIENTS

o 8 cups fresh figs
o 4 cups white sugar
o 1/2 tablespoon baking soda
o 2 cups water
o 6 cups hot water (boiling)
o 1/2 lemon, sliced

METHOD

1. In bowl place figs and dust with baking soda. Pour the hot water over the figs and soak for 1 hour.
2. Drain figs and rinse thoroughly with cold water. In a large Dutch oven combine the sugar and the 2
cups of water; bring to a boil and cook for 10 minutes.
3. Add the figs and lemon slices to the syrup in the Dutch oven and cook for 1 hour, stirring occasionally.
4. Spoon figs into hot, sterilized jars and spoon syrup over figs, leaving 1/2 inch of space. Place lids on top and screw tightly for a vacuum seal. Place in a hot water bath for up to 15 minutes.

d. Eat with pepper and salt.

Milk Rice

Ingredients
750 ml hot milk
100g rice
1/2 teaspoon salt
Raisins (seeded)
Action
a. Wash and drain the rice.
b. Soak the rice with water for 20 minutes.
c. Pour away the water, add the rice and salt into the milk and boil.
d. When done, press the rice into small cups and serve with cream and raisins.

Cream Puff Dough

Ingredients
500 ml water
4 level tablespoons butter
500g flour (sifted)
4 eggs
Action
a. In a saucepan, combine the water and butter and mix thoroughly.
b. When the water is boiling and butter thoroughly melted, turn instantly the flour and stir rapidly over the heat. In a moment you will have a perfectly smooth and soft dough free from sticky-ness.
c. Remove from heat and stand it aside till partly cold.
d. Break the egg into a cup, then turn it into the batter.
e. Beat for a moment, then add another and another.
f. Beat thoroughly and add the fourth good egg from the cup.
g. Beat he batter for 5 minutes and stand it aside for 1-1.5 hours.
h. Drop by tablespoonfuls into greased shallow pans and bake in a 170°C oven for 35-40 minutes.
i. When the puffs are done, they will be hollow and light.
Note:
a. The batter must be dropped far enough apart to leave rooms for swelling.
b. You may fill the puff shell with a little cold mashed fresh banana pulp, chopped nuts and raisins.

Ingredients
240g flour
2 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon butter (melted

a. Mix the dry ingredients and rub in butter with the tips of your fingers.
b. Add water to make a dough just stiff enough to roll out.
b. Roll 1 cm thick and cut with a round cutter and bake in a greased pan in a preheated 200°C oven for about 10 minutes.

Ingredients
240g flour
3 teaspoons baking powder
1/2 teaspoon salt
1 tablespoon butter (melted)
Milk
Action
a. Mix he dry ingredients and rub in the butter.
b. Add milk to make a mixture that may be dropped from a spoon without spreading.
c. Drop on a buttered pan 1 cm apart and bake in a preheated 200°C oven for 8 to 10 minutes.

Banana Raisins Pie

Ingredients
100g seeded raisins (chopped)
250 ml water
2 tablespoons sifted cracker crumbs
1 tablespoon flour
1 teaspoon butter
1 large banana (in thin slices)
1/4 teaspoon cinnamon
2 tablespoon lemon juice
3 tablespoons honey
1/4 teaspoon lemon extract
1/2 lemon rind (grated)
1 egg (well beaten)
2 tablespoons seeded raisins (cut in pieces)
Action
a. Cook 100g chopped raisins in water until plump.
b. Remove from fire. Add crumbs and mix with flour and butter.
c. Let it stand and covered until cold.
d. Add cinnamon, lemon juice, lemon rind, honey and the lemon extract to the slices of banana.
e. Combine mixture, add egg and pieces of raisins.
f. Bake between two crust.

Jello Pie Recipe: Classic Jello Pie

Here is the classic Jello pie recipe that makes a lovely presentation for any occasion. You can use practically any flavor of gelatin and fruit to create a rainbow of fruity goodness.

2/3 cup boiling water

1 package Jell-O brand gelatin (any flavor)

Jello Pie Recipe: Classic Jello Pie

1/2 cup cold water

1/2 cup ice cubes

2 containers Cool Whip

1 ready made pie crust

Directions

Pour gelatin mix into a large bowl. Bring water to a boil. Pour hot water over gelatin until completely dissolved. In a separate bowl, mix together the cold water and the ice cubes to make one cup. Combine cold water with the gelatin mixture and stir until all the ice melts.

Stir in one container of the whipped topping and beat with a wire whisk until mixture is nice and smooth. Refrigerate the gelatin for 15 to 20 minutes or until gelatin thickens. Spoon the gelatin mixture into the pie crust.

Refrigerate pie for 4 hours or overnight.

1 package strawberry gelatin

1 pint strawberries

1/2 pint whipping cream

1 cup sugar

1 cup hot water

1 (9-inch) ready made pie shell

Directions

In a bowl, dissolve the gelatin in hot water. Wash and hull the strawberries; place strawberries in a separate large bowl and pour the sugar over them; toss lightly until well coated. After the gelatin has cooled (but not set), add gelatin mixture to strawberries. Let mixture chill in the refrigerator until it has congealed.

With a wire whisk, beat the whipped cream, adding 4 tablespoons of the gelatin mixture as you go. Spoon the cream mixture into the bottom of the pie crust.

Pull out the strawberries from the cooled gelatin mixture and lay them on top of the cream mixture. Pour the congealed gelatin into the pie crust. Refrigerate pie for 4 hours or until completely set.

2 1/2 cups canned red cherries, drained

In a large bowl, combine the cherries and the sugar. In a separate bowl, dissolve gelatin in the hot water. Add the cherries, cherry juice and the salt to the gelatin mixture. Refrigerate until gelatin thickens. Pour cooled gelatin mixture into the pie shell. Refrigerate for 4 hours or until gelatin is set. Serve with whipped topping

How can something so delicious be so easy to make? This is a perfect dessert to serve on a hot summer night, or any time you are in the mood for ice cream. 1 1/2 cups milk

1 cup chocolate ice cream

1 large package instant Jello chocolate pudding mix

So as you can see, there are plenty of fantastic foods you can enjoy while you work on reducing fat in your liver. However, as you create your daily meals, there are some important considerations you should keep in mind in regards to the foods you eat.

Your main goal will be to reduce excess fat consumption. Most medical professionals agree fat should make up no more than 30% of your overall daily caloric intake. This means if you're consuming 1500 calories per day, then no more than 450 of those calories should come from fat.

9 calories is equivalent to 1 gram of fat, so to put it in easier to measure terms, you shouldn't consume more than 50 grams of fat for a 1500 calorie diet. A 1200 to 1500 calorie diet will help you lose weight while reducing fat in the liver.

Here are some additional tips to keep in mind:

  • Go for brown rice and whole grains instead of white rice or white bread.
  • Opt for pasta instead of egg noodles.
  • If you don't want to give up sweets, then opt for pies over cakes. Try to avoid things like doughnuts, cookies, and other high-fat sweets.
  • Focus on foods high in complex carbohydrates and avoid foods rich in simple carbohydrates like candy.
  • Substitute 2% and whole milk with 1% or skim milk.
  • Go for saturated fats over unsaturated fats, but consume all fats sparingly.
  • Avoid high fat salad dressings and other condiments. Seek out low-fat and non-fat alternatives.
  • Choose lean white meats (chicken, turkey, fish) over dark meats (pork, beef). Cut all excess fat off meats before cooking or eating and try to avoid meats from high fat areas such as ribs and wings.
  • Include foods high in fiber and eat plenty of vegetables and fruits.

What are the main flavors or the cookie ingredients you used? Apply this element to help enhance the aroma that you may want to portray on your cookie boxes or packages.

Protection:

Are your cookies fragile? Or do they need to be air-tight and stored in the fridge? Consider using for example, zip seal bags, if necessary.

Hygiene:

- Pre-pack about 2 - 4 cookies in cellophane or sealed bag and place inside cup.
- Embellish with a gift tag and fabric ribbon around cellophane. (You can also write a message or recipient name on the mug).

HOME-BAKED COOKIE PACKAGING IDEA 2:

"Milk Carton"

This is perfect for butter cookies or packaging cookies for children. Either way, the milk carton makes a great packaging box.

- Wash and dry container before use. Carefully open the top without tearing the cardboard.

- Place cookies inside.

- Seal top with staples or strong sticky-tape. (Do not use glues as they are unhygienic and not re-openable.

- Decorate exterior with wrapping paper or fabric and ribbon.

If you are computer savvy, you could create a milk carton label with recipient name, theme graphics and colors to print and apply to your cookie carton!

Use one litre carton for giving to an entire family or a smaller carton for children or single recipients.

This is a great container for refrigerating your cookies also. Plus, the benefit is that the design of the carton semi-closes on its own with the folding techniques incorporated.

"Peanut Butter Bottle"

Great for peanut butter cookies! The theme, feeling and association is already there! And you don't even need to worry about pealing the bottle stickers off. Use it instead to create a quirky cookie packaging.

Use a square piece of fabric almost twice as large as the lid size and cover cookies before closing with the lid to create instant effective packaging.

Create a label digitally and print out for a dynamic gift. You don't have to cover the entire glass or bottle, leave a bit of room so they can take a peek at the yummy cookies you baked.

HOME-BAKED COOKIE PACKAGING IDEA 4:

"Butter or Margarine Containers"

Unusual but very effective and fun. What's more, it has a lid and is lightweight for posting your cookies. Just keep in mind that most butter containers aren't air-tight.

You can decorate the exterior by creating your own labels, or sticking appropriate wrapping paper over. I recommend a food style, earthy tones and colors for this method.

- Place your cookies lying flat into the box. You may need to take out the pre-made mould shapes used and use cardboard dividers to separate your cookies.
- Simply tie with ribbon and gift tag the package!

"Cocktail or Martini Glass"

Great for alcohol-based cookies like rum balls during Christmas season!

- Place one cookie or two in cellophane, seal and place inside glass.

Mexican Dessert Recipes - Coyotas

Grocery stores frequently have a section devoted to Hispanic food. Not just tortillas and frijoles, but a wall filled with hanging bags of herbs and spices. Things like dried tamarindos compete for space with ten or fifteen different sorts of chilies. Then there are the little things that look like a small thread cone, the sort that are used on commercial sewing machines. The label reads: Piloncillo, Panela, or Panocha. What it is, is sugar.

When sugar was first being processed around 600 C.E., it was made into three forms: molasses, moscovado cones, and sugar loaves. Molasses is of course the liquid state of processed sugar cane. By cooking the molasses another step, it begins to crystallize. This is moscovado sugar. It is dark and molasses flavored. Sugar loaves are compressed cones of refined white sugar.

Panela is moscovado sugar. It is usually sold two to a package, and keeps very well on the shelf, so long as it is packed in airtight containers.

Mexican Dessert Recipes - Coyotas

Coyotas are not a feral breed of canine. Coyotas are a dessert empanada. They take a little bit of work, but they are well worth the time.

Before you begin, you will need to crush the panela. The easiest way is to put it in a doubled plastic bag and hit it with a knife handle or the flat of a hammer (being careful with fingers and counter tops of course)

Coyotas

You will need:

  • 2 ½ cup crushed panela
  • 3 cups all purpose flour
  • ½ teaspoon salt
  • ½ cup shortening
  • ¾ cup cold water

How to do it:

Mix together the flour and salt. Cut in the shortening (you can use vegetable shortening, but the traditional recipe calls for leaf lard. Calm down. It is the same calorie content as shortening, and is actually lower in saturated fats than vegetable shortening. It also gives a flakier, more tender crust.) Once the fat is cut into pea sized bits, make a well in the center and add about ½ cup of water and begin to pull the flour in from the sides. Add more water as needed. Knead the dough with your hands as you mix.

Once you have a ball of dough, turn it out onto a lightly floured work surface. Divide it into 20 even pieces. Roll out each ball into a 5" circle.

Put a tablespoon of crushed panela onto half of the circle. Wet your finger with water and dampen the edge of the dough. Fold over in half and seal the dough with a fork.

Bake the Coyotas on a lightly greased baking sheet at 375° for about 15 minutes, until they begin to turn golden brown.

Serve while still warm.

The panela will turn into a caramelly, gooey center while they are warm. Once the coyotas cool, the filling begins to solidify again. Not bad, but not as good as warm.
